Spring break threw me off! I haven't posted...or made a good meal plan in a few weeks. So here it goes for this week.

Monday-Pulled pork sandwiches with coleslaw
Tuesday-Sweet potato burritos
Wednesday-12 bean soup and bread
Thursday-Dinner at Rio del Mar's Open House fundraiser
Friday-Chinese chicken salad
Saturday-Hmmm...junk food at the Boardwalk? Crossing my fingers for a James Durbin Celebration

Trying
It's a new week and while I didn't make a menu ahead of my trip to TJ's, I did try to be intentional as a filled my cart. What's funny is that as Todd and I were putting the groceries away, I found myself staring at the food saying, "So, what should we have for dinner?" We settled on vegetarian pizza (with TJ's dough) and a pear gorgonzola salad. Yum! The rest of the week will consist of turkey tacos, spaghetti, Mac n cheese for Gabe (Passover Sader for us,) orange chicken and rice, a night out at Chile's (thanks Haley) and Saturday???? Hit me with your best ideas!
On a side note, as we were putting the groceries away, we found a large amount of food to throw away. (see photo) Do you struggle with having wasted food? It makes me feel extremely guilty, but I haven't been able to tame it. How do you guys keep your wasted food to a minimum?

We asked and you answered!
Thank you! I am excited by all of the yummy responses. I am also very hungry. My lunch was a bust today. No yummy dinner=no yummy leftovers. It seems to me that many of you carefully plan out your menu for the week and gather all of the ingredients for the entire week at once. Don't get me wrong, I know this is the best way to go and I used to do that when I wasn't working. These days, the planning ahead thing rarely happens. Instead, we put together a meal from what we have or end up going out. To be perfectly honest, this blog idea was Todd's and he started it, knowing I would take it over! What a sneaky fox!!!! If you have great meal ideas...or even a great weekly meal plan, please share it! If you need meal ideas, peruse the comments. I see some enticing ideas!!!!
Whats for dinner tonight? We ALMOST ended up out at Pizza My Heart for the Bryan Stow fundraiser, but the line was WAY too long. Instead I made spaghetti with meat sauce, squash and bread. Yeah! I have leftovers for lunch!

What's for Dinner?
I was sitting around asking my husband, Todd, "Hey, what should we have for dinner?" Todd responded, "I don't know. Let's go out," as he does many times. It seems to be a weekly dilemma. Todd suggested, "Why don't you start a blog and have an open discussion about what people are having for dinner?"
So, we are starting a blog, that will hopefully solve some of our dinner dilemmas. Please feel free to chime in and share what you're making for dinner. Hopefully this will be something we can all benefit from.
